This salad combines so many superfoods: spinach, avocado, wild caught salmon, walnuts, and strawberries! You really can’t go wrong with this kind of combination.
I made this a few months ago. I was deep in the “I’ve got to lose this baby weight and feel healthy and fit again or I’m going to go crazy” stage. If you’re a mom, or anyone who has gone overboard on the junk food during holidays, you know the feeling!
I wanted to end Salad Week with this, because it is my favorite. I hope you love it, too!
Honey Dijon Salmon Salad
- Baby spinach
- Avocado, diced
- Strawberries, sliced
- Wild caught salmon
- Walnuts, chopped
- Goat cheese
- 1 tsp dijon mustard
- 1/2 tsp yellow mustard
- 1/2 tsp whole grain mustard
- 1 Tbsp + 1 tsp honey
- 1/4 c white wine vinegar
- 1/4 c olive oil
Lightly season the salmon. My easy, go-to with salmon is lemon juice, salt, pepper, and garlic. Roast or grill the salmon. Think 7 minutes/inch of cooking time, but if it is high quality fish, you can leave it slightly undercooked inside. We prefer it medium or medium rare.
Toast the walnuts.
Whisk all of the mustard, honey, vinegar, and olive oil together.
Assemble the salads: spinach, then avocado and strawberries. Next add the salmon, walnuts, and crumble the goat cheese on top. Drizzle with the honey dijon dressing, and enjoy!
