Weekends are different as a mom. I cherish them more, because it means the three of us are together. Our weekends these days are typically filled with a mix of family, projects around the house, church, and some relaxing. I truly feel like I live a blessed life. I don’t regularly post about our weekends, but I like to do this if I can, for memory’s sake.
This weekend started off with family pictures on Friday afternoon. My parents wanted to have photos taken of our whole family. We hired a very talented photographer who goes to our church, Brian Schindler, to take these photos. He suggested having them done at Anne Springs Close Greenway in Fort Mill. If you’ve ever been to a wedding at the Dairy Barn, it is that same piece of land. Here is a sneak peek from Brian’s blog. I can’t wait to see the rest of them! We had my parents and brother over for dinner Friday night, and I made this awesome kale and pomegranate salad. The picture below is before it was mixed. Seriously, try it. It was delicious! I think I’ll make it again for the holidays.
Saturday started off with a big project for Todd. He gave our kitchen lighting a complete face lift this weekend! We had a huge, ugly, fluorescent light fixture in our kitchen before this upgrade. He installed can lighting in our kitchen. I am so proud of him!

He also gave me some time away, alone to run errands and grab some Starbucks. Gotta love a Red Cup!! I love being with my family of course, but an hour or two alone is so refreshing. I also got to catch up with my best friend who lives in France! I love her and miss her so much!
Todd’s cousins from PA were in NC this week, so they stayed with us Saturday night. Todd’s younger brother stayed, too, and got roped into helping with the lighting! We went to church together, had takeout for dinner, and watched some Modern Family reruns. Perfect, relaxing night.
Todd and his brother, Seth, finished the lighting on Sunday, and both Todd and I went for long runs. He ran 10 or 11 miles, and I ran 9.5. I ran it in 1 hour and 45 minutes. Not my ideal time. I was originally hoping to run the half marathon next week in under 2 hours, but now I’m just hoping to finish period. 😉
Last night I used leftovers to put together an easy dinner, but it turned out really well! I had leftover grilled chicken and sautéed sweet potatoes. I warmed those and 1/2 can of black beans in a sauté pan. I added juice from 1 lime, and 1/4 packet of Spicy Ranch. Then I “grilled” some whole wheat tortillas in a large sauté pan. I topped those with a little sour cream mixed with the Spicy Ranch mix and lime juice (idea from my friend, Erin!). Then top with the chicken mix and some grated white cheddar. I baked those until the cheese was melted. Top with chopped spinach, the sour cream sauce, and some salsa.
