Abbie’s birthday cake (Granny’s chocolate cake)

This cake is not fancy or really that pretty. It’s 6 layers of moist, light vanilla cake with the best chocolate icing in between each layer, and around the cake. I totally broke my gluten free diet for the night to eat this cake!!
My Granny (my mom’s mom) was one of the most special people in my life. She was always one of my favorites. She passed away just a little over a year ago and I miss her all the time. Her mom, my great-grandma, made this cake and passed the method and “recipe” down to my granny, who passed it down to my mom, who has passed it down to me. An exact recipe never existed, but Granny figured it out and wrote it down as many details as she could.
Granny was known for this cake – she made it for family events, reunions, people at church, and she even sold cakes (apparently I inherited that from her). But when we spent time with her, this cake was most likely served, and she always acted like she made this cake just for me. She was an amazing Southern cook overall. Other people in my family might say her fried chicken or chicken pastry were the best, but this was the best thing she made, in my opinion!
It was really special to spend some time with my mom making this cake.
