For our recent beach trip we wanted to have simple meals that the moms and kids would enjoy, and my cousin suggested this fried rice. I never think to make fried rice, but I loved this, and the best part….so did Davis! He has become a picky eater. It’s not that he only wants unhealthy things – he just isn’t very willing to expand his palate. BUT he ate an entire bowl of this, chicken included!
I am sharing the edited recipe that I made for our family last weekend. Mine has brown rice, and less of it, and more veggies, some frozen and some fresh. Here is the link again to the original. You can make it your own by changing the vegetables.
This is perfect for a busy weeknight because it is semi-homemade. Tip: cut the vegetables and cook the chicken ahead of time. I prepped enough for 2 meals, so we had this two nights in a row and both of my guys were happy!

Easy Chicken and Vegetable Fried Rice
- 1 package fully cooked brown rice (Trader Joe’s) (it’s a little less than 2 cups)
- 3 Tbsp sesame oil
- 1/4 onion, very small dice
- 1 garlic clove, minced
- 3 whole carrots, small dice
- 1/2 head broccoli, small chop
- 1/2 bag frozen peas
- 2 eggs
- 1 chicken breast, cooked, chopped small
- 4 Tbsp gluten free soy sauce
- 1 Tbsp sesame seeds (optional)
- Sriracha (optional)
Follow the directions on the package of rice to heat it (only takes 1 minute). Set aside.
Heat a large sauté pan. Add the sesame oil, then all of the vegetables. Cook on medium until soft.
Crack eggs into the pan and mix into the vegetables. They will cook quickly.
Add the chicken and rice to the pan and stir. Add the soy sauce, stir and cook for another minute. Now it is ready to serve! We garnished ours with sesame seeds and sriracha.*
*Leave the sriracha off for young kids!
