The title basically explains the whole recipe for this salad. It is simple, but I had to post it, because the combination is perfection! Do yourself a favor and stock your refrigerator and pantry with these ingredients this week. Strawberries, gorgonzola cheese, walnuts, and avocado are all some of my favorite things. They taste decadent, but (besides the gorgonzola) all have a lot of nutritional value.
Quantities are flexible and up to you, but here is a basic ingredient list and some pictures to help you make this yummy salad!
Strawberry, Gorgonzola, Walnut, Avocado, Chicken Salad
Yield: 1 dinner portion salad (I doubled this for two of us)
- 4-5 strawberries, sliced
- 1/4 avocado, sliced
- 1/2 chicken breast, cooked*, cut into small pieces
- 3 Tbsp chopped and toasted walnuts
- 2 Tbsp gorgonzola, crumbled
- romaine lettuce, chopped
- baby spinach, chopped
- balsamic vinaigrette, homemade or bought
Mix the romaine and spinach together in serving bowls. Top with the remaining ingredients and the desired amount of vinaigrette. It doesn’t need much dressing – the ingredients bring so much flavor themselves!
*I seasoned the chicken breasts with 21 Seasoning Salute from Trader Joe’s, and some salt and pepper. Then I started cooking it in a sauté pan with a little extra virgin olive oil and 1 Tbsp butter, and finished it in the oven. You could grill your chicken, or bake it as well.
