A few months ago on a work trip Todd had a dark and stormy from a bar that specializes in craft cocktails (from scratch, fresh ingredients, top shelf liquors, etc). He has since ordered a dark and stormy several times while out, but none have measured up. A typical dark and stormy has dark rum, ginger beer, and a lime slice.
We decided to work on a more specialty version at home, and it was a success! I am really partial to a great glass of dry champagne or a margarita, but I may have a new favorite!! This cocktail has a strong, fresh ginger flavor, acidity from plenty of lime juice, a touch of sweetness, and depth and richness from dark rum. This cocktail is perfect for our taste preferences, and we will definitely make this again!
- 3 Tbsp crystallized ginger
- 1 Tbsp fresh ginger, peeled, rough chop
- 2 limes, juiced + 2 lime slices
- 4 oz dark rum
- ginger beer (1 bottle)
- crushed ice
- 2 skewers for garnish
In a bowl or shaker muddle together 1 Tbsp crystallized ginger (use the rest on the skewers for garnish), fresh ginger, and lime juice. Press the muddled juice through a strainer, in equal amounts into 2 old fashioned or highball glasses filled with crushed ice. Add 2 oz rum to each glass, then fill with ginger beer. Top with the skewer of a lime slice and crystallized ginger pieces. Stir and enjoy!
(P.S. If you like a sweeter cocktail, you can muddle a little sugar in with the lime juice and ginger).
