Can’t stop, won’t stop. The strawberry ideas keep coming. And we went strawberry picking today, so more may be on the way.
I figured since I’m putting strawberries in everything else, why not into our salad dressing? Poppyseed dressing naturally goes with fruit, so instead of just pouring it on top of fruit, I decided to infuse it with fruit.
I was already planning to have this salad for supper that night:
Baby kale with salmon, strawberries (duh), avocado, toasted almonds, and goat cheese
I figured a new dressing would go perfectly. And it did. Yum! I’m so glad I have leftover.
This needs to be made for a girl baby shower, or a bridal shower brunch. That pink color is a great touch!
**Ideally you need a blender or small food processor for this. I used the smoothie cup attachment to my Ninja blender. Works like a charm for dressings.**
Strawberry Poppyseed Dressing
- 1 Tbsp chopped onion
- 3/4 tsp yellow mustard
- 5 strawberries
- 3/4 cup canola oil
- 1/2 cup white vinegar
- 1/4 cup sugar
- 1/2 Tbsp sea salt
- 3/4 Tbsp poppy seeds
Add all ingredients, except the poppy seeds, to your blender. Mix until smooth. Add the poppy seeds and mix once more. Refrigerate.
