Though I’ve shared a lot on my instagram, I wanted to get some ideas more permanently placed here. With the shelter in place rules, everyone has been cooking at home a lot more than usual lately. Morning (aka afternoon-night) sickness got me down for a while, but it is slowly starting to fade. I will be 16 weeks pregnant tomorrow. Thankfully I have been able to keep eating mostly healthy food, and I have craved smoothies. This post will focus on healthy breakfast ideas, and I am sharing my new favorite green smoothie recipe. Lunch, dinner, and snack ideas will come in later posts.

Bob’s Red Mill quick cooking gluten free rolled oats. We like to cook them on the stove, then add some frozen wild blueberries when they’re almost cooked. Flavored with cinnamon and maple syrup, this is a family favorite. I try to top mine with fruit, fiber-filled good fats like flax seeds and chia seeds, and nuts.

When we traveled to the mountains last weekend, we packed all of our groceries because shopping nearby wasn’t really an option. I packed eggs, avocado, berries, bananas, cashew butter, gluten free bread, and greens.

This is a wild berry vanilla smoothie with ice, frozen berries, spinach, Bulletproof vanilla collagen protein, almond milk, and water as needed.

Using this recipe for baked oatmeal turned out to be a family favorite! I used the Bob’s Red Mill GF oats, added extra fresh strawberries, and omitted the dried strawberries.

I also made some of my gluten free dairy free refined sugar free banana bread today, which is always nice to have on hand!

My New Favorite Green Smoothie

This is a very refreshing and hydrating green smoothie. Celery is not your typical smoothie ingredient, but don’t write this one off! I will say that it needs a high-powered blender. I have been using this one for 3 years, and it’s wonderful.

In a blender, add the following ingredients in this order:

  • 3/4 cup ice
  • 1 1/2 – 2 cups frozen mango and pineapple
  • 2 stalks organic celery, chopped
  • 1/2 large cucumber, chopped
  • 1 inch fresh ginger, peeled
  • juice of 1/2 lemon
  • 4 scoops (2 servings) vanilla collagen protein powder
  • 2 handfuls baby spinach
  • as much water as needed to blend (maybe 2 cups)

Blend until very smooth. I start on a lower speed, then go up to 8 on the Vitamix.
