This past Friday, I had the privilege of baking for another wedding! A friend from my former workplace asked me to bake for her special day, and I was honored. She and her then fiancé, Jamey, did not want the traditional tiered cake. Rather, they wanted to know if I could do a variety of cakes.
Since I had just done a cake bar of 5 cakes for my brother-in-law’s wedding (picture below), I knew I could do it! I sent the bride these pictures, and she told me that this was exactly what they were thinking.
I did customize their flavor variety, though. I sent Cindi and Jamey a list of possible flavors, along with an offer to experiment with other flavors if they wanted.
Ultimately, we ended up coming up with 6 flavors in 8 cakes total:
2 Classic Red Velvet: Red Velvet Layers, Cream Cheese Buttercream, Red Velvet Crumb Garnish
2 Chocolate Toffee: Chocolate Cake Layers, Chocolate Cream Cheese Buttercream, Salted Caramel Filling, Toffee Bits + Dark Chocolate Chip Filling and Garnish, Chocolate Ganache Topping
1 Strawberry: Fresh Strawberry Cake Layers, Fresh Strawberry Cream Cheese Buttercream Filling, Vanilla Cream Cheese Buttercream, Fresh Sliced Strawberries Garnish
1 Carrot: Classic Carrot Cake Layers (with pecans, walnuts, cinnamon), Cinnamon Vanilla Cream Cheese Buttercream, Toasted Walnut Garnish
1 Coconut (No Picture)
1 Lemon Raspberry (the one they chose to cut as their “wedding cake”) (No Picture): This was a 6″ cake with 4 Fresh Lemon Cake Layers, Vanilla Cream Cheese Buttercream, Raspberry Coulis Filling
It was such a great opportunity to take classic cake recipes, and add twists to them. I’m hoping to have more opportunities like this in the future!
