Trying to get this posted before Monday ends! I was slack with blogging last week, but I’m hoping to be more consistent. Davis’ party is this weekend, plus I’m baking for a wedding, so we’ll see how that goes. 😉
Anyway, besides Davis being sick for the first time, we had a pretty good, productive weekend. Oh yeah, and we burned a ton of calories running, so that’s a big plus!
We ran the Thunder Road half marathon on Saturday morning. SO glad we can check that off the list. It was a huge personal goal for me to run a half marathon after having a baby. Not trying to brag, but I’m honestly fairly proud of myself for this accomplishment. I did not train like I should have, so I’ve been pretty anxious about it the last few weeks. But, it actually went better than I expected! I just saw my official time, and it was 2 hrs, 9 min. That’s not my best of the 4 that I’ve run, but I’ll take it! I ran the whole 13.1 miles and crossed the finish line. Todd beat 2 hours – congrats, babe! The ‘lovely’ picture below is us after the race.
While we ran, my mom kept Davis, AND made our flower pots look pretty. Now, I just need to keep them alive! This picture was taken at night, so it’s not the greatest view, but I love them.
Davis got his first cold this weekend. He’s so close to turning 1, and this is the first time he’s been sick, so we feel very blessed about that. He’s adorable even when sick.
I also made salads for dinner twice this weekend. I want to remember what I made, and also share them if you need some salad ideas. These salads are husband-approved!
The first one is close to a basic spinach salad. Spinach, mixed greens, boiled egg (sliced), sautéed mushrooms, and bacon. Use some of the bacon drippings to make a dressing. I added a spoonful of dijon mustard (Trader Joe’s is one of my favorites), about a tablespoon of honey, and some apple cider vinegar to half of the bacon drippings. Serve warm on the salad. We had this with a classic baked potato. The picture below is Todd’s plate.
The second salad had spinach, mixed greens, chicken, bacon, avocado, tomato, and some spicy ranch dressing. Neither were very low-fat, but we just kept saying, “We ran 13 miles this weekend. Who cares?!” Haha! After we ate this, we had cupcakes. Great meal to end a weekend!
