The weekend is here! Fridays are simply the best, and this one is going to be especially great. Two of my best girlfriends and I are taking a “mommies” day to go to lunch and shopping. Because of schedules and kids and obligations and work and errands and cleaning and babysitters, this is so rare for us, so we’re thrilled! I know most of you know how that is! Big thanks to our moms/husbands for taking care of our kiddos so that we can do this!
I’m linking up with Christina, April, Natasha, and Darci again for Five on Friday! This post has a couple things that are more serious than the usual, but there are still some frivolous things and a recipe tucked in there as well. Enjoy and thank you for reading!
ONE: One of the musicians from our church, Luke Hill, was critically injured in a hit and run in Charlotte earlier this week. He was walking, and the driver hit him and fled the scene (the police are currently looking for the person who did this). Luke was rushed to the hospital and taken to surgery for bleeding and bruising in his brain. More surgeries were scheduled to fix broken ribs, a fractured elbow, and so on. His treatment is extensive. If you would, please say a prayer for him – we know God is a healer and our church and his family and friends are believing for full recovery, and especially praying for full brain function for him. TWO: Skinny Slow Cooker Taco Soup from Gimme Some Oven. I made this last week, with a few adjustments. We loved it and it was the easiest dinner I’ve made in a while! My adjustments: -I used boneless chicken breasts. I added them to the crock pot, along with 1 Tbsp taco seasoning, a bay leaf and 1/2 c. water 2 hours (on high) before adding the rest of the soup ingredients. I just shredded the chicken as I stirred and cooked the soup. -All I had was crushed tomatoes, which worked nicely. -I did not add the olives. -I used black beans instead of red kidney beans. -We didn’t use the the tortilla chips for garnish, but we did add avocado, cheese, cilantro, squeeze of lime, and Todd added a little salsa and sour cream.
THREE: These stocking stuffer ideas from The Vault Files last year are super. I’m planning to steal some of these ideas this year! I especially love the travel size beauty favorites! I think I’ll look on those shelves at Ulta by the checkout line. They have travel sizes of more expensive skin care and makeup items that would be perfect, girly stocking stuffers!
FOUR: Pears and Blue Cheese. Random addition to my 5, right? Well there are some delicious pears available now, and I’ve been addicted to this combination this week. We’ve had it in a salad form with spinach and other greens, toasted pecans, and balsamic vinaigrette. This appetizer from Real Simple of pear slices stuffed with blue cheese and arugula and wrapped in prosciutto looks perfect for the holidays!
FIVE: You Make Me Brave by Bethel Music. “Brave” is a word that has been on my mind and heart recently. Our church did a sermon series called “How to be Brave,” and the sermons were some of my favorites from our pastor. (Click here to listen to them)! I remember reading a blog post at the new year of someone who said their word for 2014 was Brave. I never thought much about courage as a Christian until this year, but it has really struck me lately. If you haven’t yet, go listen to the song in the link above. 🙂
