Our weekend was low-key and productive. We spent time with family, got things accomplished around the house, and explored Charlotte! I also ate some pretty unhealthy meals…wine and white cheddar popcorn for dinner on Saturday. Yikes! Gotta get back on track this week.
Friday my parents came over for dinner. We had our family’s BBQ chicken recipe, a warm corn salad with tomato, avocado, cilantro, and a honey-lime dressing, and cucumber salad. If only we had made some peach cobbler and homemade ice cream for dessert, it would have been the ultimate Summer meal!
Charlotte has a train system, called the light rail, that allows people to commute from a southern part of the city to uptown. We had never taken Davis to ride the train, and we knew he’d love it! We rode it up to the 7th street station and walked around the market there. We also tried Not Just Coffee for the first time! After the market we explored Imaginon. I will definitely make plans to take Davis back to that theater for a show and to play.
Later that afternoon one of my good friends had her baby boy! I can’t wait to meet him!
While working outside, we saw deer in our yard (which is an everyday thing), but on Saturday we saw 2 baby deer! Tiny baby deer with white spots! We tried to get a picture but we couldn’t grab our phones in time.
Our neighbors brought us a welcome basket last week, and they included a loaf of cinnamon chip bread from Great Harvest Bread Co. I made the boys some French toast out of it on Sunday morning. It is the best bread for French toast! (I dipped the bread in a mix of coconut milk, 2 eggs, vanilla, and cinnamon).
My mom brought me some gorgeous hydrangea from her yard, and I took some pictures for a post about our dining room table and updates we’ve done in that room. I will blog about that more this week!
Also on Sunday I went to Starbucks for some time away to blog and catch up. I ran into one of my best friends, Ashley – perfect timing!
Todd will certainly be missed while he’s traveling! I love my boys, and am always sad to see the weekends end.

Jess, we’ve been so blessed by our new neighbors! Most of them are older than us, which is refreshing in a way. We can learn a lot from them and their hospitality!

Nikki, thank you. We don’t have an exact recipe actually. We cover the chicken with either Carolina Treet bbq sauce or Trader Joe’s gold bbq sauce then bake it until it is mostly cooked through. Then grill it and baste it with our family’s sauce…In a saucepan on the stove, we mix Texas Pete, butter, and lemon juice (no exact amount, I’m sorry!). Let the sauce simmer for awhile before using it to baste the chicken on the grill. The lemon juice and butter cut the heat of the hot sauce.
