First, I want to take a second to recognize Leslie Sisti of A Blonde Ambition blog. She passed away this week from complications with her heart, leaving her husband, and two daughters under two years old. I only knew her from blogging (one of the first blogs I read) and comments, but I was impacted by this awful news, and simply cannot imagine how hard this is for her family. Kelly has been posting about Leslie, and also linked to a GoFundMe page for Leslie’s family. I think she is planning to post more fundraisers and ways to help her family as well.

ONE: Heading to the coast tomorrow! I apologize in advance for too many beach pictures on Instagram.
TWO: Todd’s birthday is during our vacation, and I’m doing some recipe planning to celebrate him. This mint chocolate ice cream cake looks perfect!
THREE: I worked on another article for FTD’s blog Fresh. This time it was all about Fall birthday parties! Fall – cannot believe it is so close! The post will be live soon, and I will post more about it then, but here is a sneak peek of one of the party ideas.
FOUR: I feel totally unprepared for Davis to go to preschool. It is only two mornings per week, but still. I need to find him a book bag and my mom is looking for a lunch box. Ideally, I’d like to use a bento box style for his lunch. Pottery Barn has some options, and Sarah told me that Zulily had some as well.
FIVE: I made some red velvet Butterfinger cake pops for an event at church tonight. I am not normally a red velvet fan, but I’ve got to say these were tempting. Good thing they weren’t gluten free – could’ve been dangerous for me!

I don’t exactly have a recipe…I made red velvet cake, and cream cheese buttercream. I added about 1/2 cup peanut butter in the buttercream, plus plenty of finely chopped Butterfingers. Maybe I’ll do a cake pop tutorial soon??
Have fun at the beach! And make sure Davis’ bag and lunch box go by your preschool standard! My sister’s friends were pretty heart broken when their kiddos couldn’t use their monogrammed bags!

That’s good to know about the monogram! I’ve never heard of that rule, but it’s probably because I’m new to the whole school thing. I think we found some good options!

I don’t know why I never considered making my own ice cream ‘cakes’ before, but this brilliant idea is the perfect twist on our most beloved, fudgy dessert. Lindsay, Do you also cover each layer when you place it in the freezer to set? I would hate for such decadence to be tainted by the flavor of freezer!
