Hi friends! Are any of you snowed in? We got some snow, but mostly freezing rain. We did play outside a little yesterday morning, though. Then we watched Davis drink his hot chocolate and were only slightly jealous. 😉 Todd and I have not been eating grains, dairy, or sweets. I blogged about our New Years Eating and Exercise Plan on Wednesday. I’ve been recording most meals on my instagram story, but I wanted to share what I ate this week here as well. Recording my meals keeps me accountable, plus I always enjoy reading others’ posts like this, so I wanted to share mine!
Tuesday:
- Breakfast: BLT Frittata (kale, eggs, almond milk, tomato, bacon)
- Snack 1: Apple
- Snack 2: Paleo Banana Nut Muffin
- Lunch: Spinach & Berry Salad with Avocado, Spicy Sweet Herb Roasted Nuts, Balsamic Vinegar + Olive Oil
- Dinner: Cauliflower Rice, Roasted Potatoes, Salmon with Avocado Salsa
Wednesday:
- Breakfast: BLT Frittata
- Snack 1: Berries, Nuts, Seed Bowl (strawberries, blueberries, blackberries, pineapple, raw almonds, raw pecans, unsweetened coconut, flax seed, chia seeds, almond milk)
- Lunch: Baked Sweet Potato, Cauliflower Rice, Salmon
- Dinner: Fajita Bowl (spinach, roasted sweet and white potatoes, shredded chicken, sautéed bell pepper and onion, pico de gallo, avocado, cucumber, salsa)
Thursday:
- Breakfast: Sausage Kale Frittata (kale, chicken sausage, eggs, almond milk)
- Snack 1: Apple
- Snack 2: 2 Paleo Banana Muffins with Raw Almond Butter
- Lunch: Veggie & Chicken Bowl (sauteed kale, broccoli, shredded chicken, grape tomatoes, sweet potato)
- Dinner: Fajita Bowl (same as the salad above, but I sauteed the greens and added a sauce)
- Snack 3: Plantain Chips
Friday:
- Breakfast: Smoothie Bowl (frozen berries, frozen banana, spinach, water, almond milk, egg white protein powder, probiotic, hemp seeds, chia seeds, flax seed, unsweetened coconut, raw almonds, raw pecans)
- Snack 1: Spicy Sweet Herb Roasted Almonds and Cashews
- Snack 2: Paleo Banana Nut Muffin
- Lunch: Sauteed Kale with sweet potato, shredded chicken, avocado, hemp seeds
- Snack 3: Plantain Chips and Salsa
- Dinner (cheat meal!): Basil Thai Pad Thai with Shrimp; Red Wine
Saturday:
- Breakfast: Roasted Potatoes/Sweet Potatoes; Chicken Sausage; Avocado; Fried Egg
- Snack 1: Paleo Banana Nut Muffins with Almond Butter
- Lunch: Chicken Lentil Soup
- Snack 2: Celery and Hummus
- Dinner: Turkey Taco Soup with Plantain Chips
Sunday:
- Breakfast: Smoothie Bowl with same toppings as above
- Snack 1: Plantain Chips with Hummus
- Lunch: Chicken Lentil Soup; Orange

Hi!! Love your blog! I am a breastfeeding mama as well and was wondering your thoughts on 1. Cows milk vs. almond? (Don’t like the taste of almond milk in coffee…) 2. Breastfeeding hunger!!?? I can’t seem to be satisfied with meals (especially dinner) any tips and/or after dinner snack ideas? Thanks so much!!

Hi Molly! Thank you, that’s so sweet! I have not really had cows milk for years. I eat cheese some (before this eating plan), but that’s it really. I enjoy almond milk or coconut milk (carageenan free if possible) in cereal, smoothies, etc. Califia Farms brand almond milk is my favorite. Almond milk is a good substitute for cows milk in a lot of dishes. For instance, I have used it to make a cheese sauce, and when cooking grits (so southern ;)). In coffee, I like almond milk creamer or coconut creamer, or even soy creamer – those all have thicker consistencies. Soy isn’t perfect, but my body tolerates that better than cows milk, and that’s really the only soy I eat. I’ve been trying to have 5-6 meals/day rather than just 3 large meals. I’m starving as well! When I’m not doing grain-free, I like to make popcorn on the stove. Another idea is banana “nice” cream – I have a recipe on my blog if you search for that. It’s basically just blended frozen bananas, and sometimes we add in almond/peanut butter and cocoa powder. Before I cut out grains I enjoyed homemade granola with almond milk (again, search my blog for homemade granola) – oats are great for breastfeeding. I also like Trader Joe’s plantain chips, but they don’t offer as much nutritional value.
