I made these skillet shrimp fajitas on a Saturday, but they could easily be whipped up on a busy weeknight. And Mexican food meals like this are such a crowd-pleaser, because everyone can choose their own toppings. Ideally, these are done in a cast iron skillet, because the food will char a bit as it cooks. This is another meal that will become a regular at our house!

- 1 lb shrimp
- 3 limes juiced
- 2 Tbsp chili lime seasoning Trader Joe's brand
- 2 bell peppers thinly sliced
- 1 sweet/vidalia onion thinly sliced
- 2.5 Tbsp olive oil

Instructions
- Marinate shrimp in the juice of 2 limes, 1 Tbsp chili lime seasoning for at least 10 minutes.
- While that is marinating, heat 1 1/2 Tbsp olive oil in cast iron skillet. Sauté the peppers and onion in the skillet until lightly browned. Some can be charred.
- Squeeze 1 lime over the peppers and onion. Stir in 1 Tbsp of the chili lime seasoning. Place the cooked peppers and onion in a bowl and set aside.
- Keep the skillet on over medium heat. Add 1 Tbsp olive oil. Add the marinated shrimp, and cook until done.
- Serve in tortillas, garnished with avocado, sour cream, salsa, cilantro, and cheese.
