I’ve put together another edition of Recipes I’ve Tried Lately. Between Pinterest and blogs there are millions of recipes out there in internet land, and I like to remember and share the ones that I make. Especially the ones my family enjoys! Do you all like posts like this? Here are 5 recipes I’ve tried in the last several weeks.
Healthy…Ish Chocolate Chip Cookie Bars by Half-Baked Harvest
I have made these bars twice recently. Davis and I made them together for the Super Bowl, and I made them again when we had our cousins over for a pizza party this weekend. For some reason they were slightly better the first time, but they are still a great, healthier alternative to traditional chocolate chip cookies! (P.S. If you are looking for THE BEST chocolate chip cookies, I told all about them in this post).
Salmon Asian Salad with Whole 30 Dressing
I changed up the original recipe some, but I followed the dressing recipe exactly! It is easily made in the blender, and it was really so yummy. I bought a bag of the cruciferous crunch salad mix from Trader Joe’s, mixed in a thin-sliced bell pepper, and tossed it in the dressing. I also added some scallions and sesame seeds. We topped this with salmon that I cooked on the stove. I just seasoned the salmon with salt, pepper, and sesame seeds. I heated up a little olive oil and sesame oil in a sauté pan and seared the salmon well on both sides. I like to cook salmon until it is just barely underdone, around 135 degrees internal temperature.
**If you don’t have a digital meat thermometer, I highly recommend purchasing one! They are not expensive, but they come in so handy! I use mine all the time. I always use it for meat and fish, but I’ve even used it when making a dough with yeast to measure the temperature of the liquid before adding the yeast.
Almond Butter Granola by Two Peas and Their Pod
This has become our go-to homemade granola. I have posted about it on instagram a few times, and I’m sure the Two Peas and Their Pod folks are tired of seeing my tags about it. 🙂 It is so easy to throw together. We have ours with almond milk and berries, on top of smoothies, and just as a snack.
Vegan Oat Pancakes by Feasting on Fruit
I have shared these before, but I have some new followers and wanted to tell you about these pancakes again. I make them all the time! They are gluten free because they are made with oat flour. They are more dense than traditional pancakes, but still so delicious! And honestly I like them better than using gluten free flour to try and make “normal” pancakes. We like them plain, with maple syrup, with berries, or topped with almond butter. For Valentine’s Day breakfast I used a heart cookie cutter when I cooked them. Oh! I always add a pinch of salt to the batter when I make them, and I typically double the recipe and keep the leftovers in the fridge for the next day’s breakfast.
Paleo Blender Bread
I think I have also posted about this in the past, but I wanted to make sure and share it again. You know that Weight Watchers commercial when Oprah is basically screaming “I LOVE BREAD!” Ha! That commercial kind of gets on my nerves, but I can understand Oprah’s sentiment. I love bread, too, but it doesn’t love me. It is so nice to have an alternative when I’m craving it, but want something grain-free. This 5 Minute Paleo Blender Bread from Paleo Gluten Free Eats is my go-to. If you’re looking for arrowroot powder, I always order mine from Amazon.
