Dairy Free Cauliflower Mash recipe; side dish

Side dishes can get boring and repetitive, quickly. And sometimes we get stuck in a rut and just do the same-old macaroni and cheese or baked sweet potatoes. But this cauliflower mash is always a hit with my boys! It is dairy-free and made with a healthy veggie that your kids will barely notice. Any time my kids happily eat vegetables I feel like I have scored some mom points. This works well as a side dish for chicken, as well as any meat like pot roast or short ribs. I’d love to know if you try this version!

Dairy Free Cauliflower Mash
This makes a great, healthy side dish! Serve it with roasted chicken, braised short ribs, pork tenderloin, or pot roast.

  • 1 head cauliflower cut into pieces, not too big
  • 5 cups chicken stock
  • 2 garlic cloves peeled
  • 2 Tbsp ghee
  • 1/2 cup unsweetened almond milk warmed
  • salt and pepper to taste

  • 1 head cauliflower cut into pieces, not too big
  • 5 cups chicken stock

Instructions
  1. Place cauliflower, garlic, and stock in a pot. *(or how much it takes to cover the cauliflower in the pot). Cover the pot and bring to a boil.
  2. Turn the heat down and boil lightly for 11 minutes, or until the cauliflower can be easily pierced with a fork.
  3. Drain the liquid from the pot completely. Return the cooked cauliflower to a pot and put the lid back on. Place back on the burner for just a minute or two. This helps get the rest of the liquid out of the cauliflower.
  4. Place the cooked cauliflower in a blender or food processor. Blend until puréed.
  5. Add the ghee and almond milk. Blend again until smooth. Season with salt and pepper as needed and blend again.
