Do y’all follow Lisa Allen on instagram? She is a beauty and has such a neat family. She writes about fashion and family, and occasionally posts recipes that her family enjoys. I saw this shrimp ceviche months ago and bookmarked it for warmer weather. It was in the high 70s in Charlotte a couple weeks ago, and I knew this would be a perfect Friday night dinner! We enjoyed this on our porch with rosé and Dos Equis, some tortilla chips, a side of black beans, and a platter of fresh veggies with guacamole and hummus. For the boys I set aside some shrimp that had marinated in the citrus juices. I didn’t add the avocado to the ceviche because I knew we’d be having guac as our vegetable dip. Next time I will add a bit more jalapeño to this because our pepper wasn’t very spicy. I will absolutely make this again!! It will be perfect for a night with friends and margaritas.
