I must be honest. I still have some of these in my refrigerator, and they are the food that is tempting me most! Whole 30 started yesterday, and I may just have to freeze the leftover muffins to enjoy at the end of this month. These delicious, AND healthy, muffins are from Stephanie Spring’s blog. I highly recommend making them asap! Stephanie and I are swapping recipes today. While I made her Healthy Banana Chocolate Chip Muffins, she made my Brussels Sprouts Salad with Apples, Raisins, and Carrots. Go check out her recipe and lots of other cuteness, beautiful photos, and delicious food!
Stephanie Spring’s Healthy Banana Chocolate Chip Muffins
Davis helped me bake these, and clearly had fun. As helpful as he was, he was really just in it for the batter-covered spatula. We put a muffin in his lunch box a few days last week, and he loved them! This will be a repeat recipe in our house. And bonus! They are gluten free, grain free, and can be made dairy-free with these chocolate chips.

I have been looking for a good muffin recipe for my girls’ lunches! thank you! I too am eager to whole 30 it! Just need motivation to start and to commit to a start date. What was it for you that lit the fire under your feet to do it? Thank you so much! Andie

Hi Andie! I hope your girls will love it. 🙂 I knew I wanted something to kick off the warmer weather in a healthy way. I also have a few habits that I want to kick, such as late night snacking and eating chips (even if they’re “healthy” chips) every day. Plus I really do not feel as well when I eat dairy, but I have let myself eat it lately.
