As we were eating this, I told Todd that I could eat this any meal of the day, for several days in a row. This is a combination of so many of my favorite things. This easy whole 30 compliant bowl works for breakfast, lunch, or dinner! You could add things to it, like other roasted veggies, avocado, and hemp seeds. I’ve shared the links to the recipes below.
What You’ll Need for an Easy Whole 30 Bowl
- baby spinach or kale
- roasted vegetables (see my post “How to Roast Almost Any Vegetable” for details and cooking times)
- I added some turmeric to the cauliflower
- a fried or poached egg
- Pinch of Yum’s 5-Minute Sunshine Sauce (I added a handful of parsley to mine)
All of the vegetables can be prepped ahead of time, so this meal can be simple to throw together right before it is time to eat! The sunshine sauce has lasted in our refrigerator for over a week now. Whole 30 requires a ton of time in the kitchen, so anything that can be prepped ahead of time makes life so much easier.
My friend April told me about this 5-Minute Sunshine Sauce and suggested I try it. She also gave me the idea of adding parsley. It is really delicious, and works well on just about everything! I added it to our breakfast salads the other morning as well. Parsley is a great source of vitamins and antioxidants. It helps fight inflammation, among other benefits. And garlic is great for our gut, and therefore an immunity booster. This is so simple to make – just throw everything in the blender!
I’ve said it here before, but this is the blender I swear by. I’ve had it exactly 1 year, and I’ve used it well over 300 times. I would buy this model again in a heartbeat!
