In honor of the holiday weekend, I thought I’d share a recipe that will go perfectly with grilling out or a barbecue! Let me really upfront, though. This broccoli salad is not necessarily a “healthy” dish like most of my recipes. It even has real sugar! BUT, it does use avocado oil mayonnaise, which is a cleaner alternative to traditional, and, hello, the main ingredient is broccoli after all. And I like to use raw apple cider vinegar, so that’s something, too. Anyway, this one is a crowd-pleaser, and will go great with just about any summer meals. We recently had ours with some roasted chicken and a cucumber, tomato, avocado salad. If you’re heading to a barbecue with friends this weekend and need to bring a side dish, here’s your recipe! I hope you all enjoy this broccoli salad, and forgive me for not sharing a healthier version for now.

I use the Chosen Foods brand mayonnaise, because I find it at Costco. It is also available on Amazon! I know there are other good paleo brands of mayonnaise as well. FYI, I have a new highlight saved on instagram showing some of what I buy at grocery stores. For now it has my recent Costco haul, but I will add to it next time I go to Trader Joe’s and Whole Foods.

I recommend prepping all of the ingredients ahead of time. You can chop the broccoli (I like to use minimal stem, mostly the florets), cook and chop the bacon, and chop the onions. You can also mix up the dressing a couple days before. Once you mix the dressing into the salad, it needs to sit in the refrigerator at least one hour before serving, and up to overnight.

Ingredients
  • 6 cups broccoli florets mostly, not as must stem, chopped really small
  • 3/4 cup red onion small dice
  • 3/4 cup raisins
  • 3/4 cup roasted sunflower seeds
  • 8 pieces bacon cooked and chopped
  • 1 cup avocado oil mayonnaise
  • 4 Tbsp raw apple cider vinegar
  • 2 1/2 tsp sugar
  • 1/2-3/4 tsp salt
  • 1/2 tsp pepper

Ingredients
  • 6 cups broccoli florets mostly, not as must stem, chopped really small
  • 3/4 cup red onion small dice
  • 3/4 cup raisins
  • 3/4 cup roasted sunflower seeds
  • 8 pieces bacon cooked and chopped
  • 1 cup avocado oil mayonnaise
  • 4 Tbsp raw apple cider vinegar
  • 2 1/2 tsp sugar
  • 1/2-3/4 tsp salt
  • 1/2 tsp pepper
Instructions
  1. Mix together the mayonnaise, vinegar, sugar, salt and pepper with a whisk. Set aside.
  2. In a large mixing bowl, place the broccoli, bacon, onion, raisins, and sunflower seeds. Mix well.
  3. Pour the dressing into the large mixing bowl with the broccoli mix. Stir until the dressing is well incorporated.
  4. Cover and refrigerate for at least an hour and up to overnight before serving.
