Is anyone else more than ready for Spring? I think everyone I know has had sickness run through their homes, and it is just exhausting. It really will take the wind out of your sails. I know it has for us lately. The good news is that we are busting out of Charlotte this weekend and headed to Disney! I know I have been a little MIA on my blog lately, so I wanted to share some random Friday thoughts: what I’ve been up to lately, food I have made, and some confessions. I’m getting pretty real and raw in this post!
Friday Thoughts and Confessions
- The flu is EVERYWHERE right now. I’m scared to take my little guys anywhere. If you’re like me and are trying to prevent the germs from getting to you, check out this post for some tips and supplements to take. We’ve been practically chugging elderberry around here, and the essential oils are always diffusing. Ridge is home sick, only because he had a low fever yesterday morning. Thankfully whatever he had is gone, but I just don’t want him accidentally spreading a virus.
- Packing for Disney is stressing me out more than it should. Thank goodness we have a great Disney planner.
- We just re-enrolled Davis for school. First grade! How in the world did that happen?! He reads now, is doing well in school, and makes us so proud.
- I also just signed him up for Summer camps. Last year I did not have a good plan for the boys and we all went a little nutty being home for 3 months.
- Catering a beautiful baby shower this past Sunday really gave me a pep in my step! Being alone in my kitchen, getting caught up in making food for a celebration is my happy place. I was thrilled to make the food for such a sweet baby shower. I will share more of the details soon.
- Speaking of food, I have a new favorite meal. Do you all follow The Defined Dish? She posts some great tips on instagram, and one of her Highlights is all about eggs. I followed her method to poach eggs and it was so helpful. I sautéed some shaved brussel sprouts in olive oil until they were just browning, seasoned with salt and pepper, then finished with a generous splash of balsamic vinegar. I added those to a bowl, with some roasted sweet and regular potatoes, avocado, and a poached egg. Oh my goodness, was it delicious!
- I have been snacking WAY too much. I need to cut it out. Emotional eating is an issue for me. My meals have been super healthy but the in-between is where I get in trouble. Also I am terrible at following strict plans or diets. In my early twenties I had periods of being very obsessive about eating small amounts of food to be skinny (aka disordered eating), so I’m nervous to go there again. But I need to do something. If I do start a new plan or come up with some tips, I will share with you guys! For now I’m just going to focus on eating whole foods, lots of veggies, and fewer snacks. I am going to share everything that I’m eating today and tomorrow. Hoping that some accountability will help. 🙂
- I didn’t go all out for Valentine’s Day. Definitely no Pinterest-worthy moments around here this week. I did buy teacher gifts and the boys took Target valentines to school, but that’s about it. You win some, you lose some.
- Managing my time has been a struggle lately. I only have 3 mornings alone each week, and those are also the only times I have to make appointments and run errands. If I have been slow to blog and answer questions on instagram, I apologize! It’s just a lot to keep up with sometimes. I love the community, though!!
- I am an enneagram 3, and sometimes that means I am extremely productive and energetic. And sometimes I put way too much pressure on myself and get really low. I was feeling this way recently, but couldn’t really put my finger on it to find an explanation, then I saw this from Your Enneagram Coach.
- We almost bought a house last week. We (I) have been so wishy-washy with where we want to live, wanting to move closer to the boys’ school, etc etc. We went to see this house 3 times and probably drove our sweet realtor crazy. But we decided against it, and it went under contract the next day. I am trying to be more content with what we have now, because what we have is pretty great. And I honestly just need to embrace Charlotte traffic. Y’all see me in my car a lot on instagram, and that’s because I live there now. 😉
- Speaking of our house – because we are most likely going to stay put, we have a lot of projects that I need to get started on. We are planning to buy new toilets (super fun), redo our powder bath, update our guest bedroom, have another large tree cut down, refresh Davis’ room, and install a new fence (a tree fell on ours). I’ve been referring back to my home design board on Pinterest more lately.
- Yesterday I gave my fiddle leaf figs a shower in our bathroom, and my orchid has 2 new blooms this week! Feeling good about that, despite my black thumb track record.
