Today I wanted to share some recipes that I’ve tried lately, because I know we’re all always looking for new ones! These are some that I either found on Pinterest, other blogs, or brands I have tried. These recipes include a store-bought enchilada sauce, salmon burgers, a matcha latte, and several other ideas.
Goop Salmon Burgers with Asian Detox Salad
I made the burgers exactly according to the recipe, and they were great. Even my boys ate them! Todd and I had the leftovers for lunch the next day. I topped them with a little spicy mayonnaise (just avocado oil mayo + sriracha + a little GF soy sauce). I also mixed some cooked and cooled Lotus brand rice ramen noodles with sesame oil, honey, and soy sauce and topped with sesame seeds.
For the salad, I didn’t find napa cabbage at the two grocery stores I tried, so I gave up and used all romaine. I love napa cabbage, though. I also added some toasted sesame seeds and chopped almonds for more crunch. I liked the salad ingredients, but was not a huge fan of the dressing. It was okay.
I would definitely make the burgers again!
Asian Cucumber Salad
These cucumbers were so yummy and easy. My boys didn’t eat them like I had hoped, but I would still make them again. I think they are best the day of, and they were a great accompaniment to the salmon burgers.
Enchilada Sauce and How to Make Healthy Enchilada Bowls
I found this Simply Organic enchilada sauce recently, and we really liked it! I just lightly browned some chicken breast (tenderloins, but regular or thin-sliced chicken breasts would work fine), then added in the sauce and let simmer until the chicken was cooked through. I then sliced the chicken, and added it to a bowl of brown rice, chopped spinach, black beans, green onion, cilantro, avocado, and goat cheese, and then drizzled a little more of the sauce on top for a great enchilada bowl! The next night I met a girlfriend for dinner and Todd used the leftover chicken to make plantain chip nachos for the boys and that was a hit as well. I like making my own enchilada sauce, but this was a great option for something store-bought, easy, and semi-homemade.
Matcha Latte
I saw a similar recipe from Weelicious (such a great person to follow!) and tried it yesterday afternoon. It was easy, delicious, and just enough of a caffeine boost! Plus I appreciated the change from coffee. Matcha is a more potent source of antioxidants than basic steeped green tea. I found the matcha powder at Trader Joe’s, but I know it probably is not the highest quality. I don’t know enough about matcha to be a matcha snob. 😉 We also buy our coffee, pre-ground from TJs!
Pink Lemonade Smoothie Bowl
Mycah is one of the sweetest gals to follow in the blog and instagram world. She completely changed her diet while she was trying to overcome PCOS to get pregnant with their daughter – it worked! She has great smoothie recipes, and this pink lemonade smoothie is one of my favorites! It’s pink, refreshing, full of veggies, and delicious. I left out the coconut oil, because the the protein powder I use has MCT oil, and I added some extra raspberries. I also used a little less milk to make ours thick enough to have as a smoothie bowl. My boys love this, too.
Purely Elizabeth Granola
If you guys follow me on instagram, you know I love the Purely Elizabeth granola. Our favorite flavor is the original. I almost always buy it from Target, because they often have it on sale. And even not on sale, it’s almost $3 cheaper there than at Whole Foods. It’s also a pretty good deal from Amazon.
