I’m going to start a new little series called Healthy Semi-Homemade Meals. I want to share with you guys how to facilitate a healthy family meal without all of the fuss! So far I have a list of a few ideas, and tonight I’m going to start with what we ate for dinner: gluten free dairy free smoked salmon bagels! You know what makes them even better? We served dinner on paper plates.
Anyone who has celiac or has to eat gluten free knows how hard it is find a good bagel! These are more like bagel thins, but the texture is so much better than any other store-bought gluten free bagel I have tried. They come in a pack of 6, and our family polished off the entire bag tonight. Todd and I found these O’Dough’s bagels at Earthfare, but they’re also available on Amazon, and they can be frozen if you buy them in bulk. I also found some dairy free cream cheese (at Trader Joe’s I think) that has real ingredients! The brand is Miyoko’s and I have yet to try any of their products that I didn’t enjoy.
If I could make one change to this meal, I would’ve added a squeeze of lemon juice on the smoked salmon and a few capers. Other than that, this was a hit with our family! For the boys, I put scrambled eggs with spinach in place of the salmon, and they had their cucumbers on the side. Davis did eat the salmon, just not on his bagel.
Gluten free dairy free smoked salmon bagel
To make this meal, you will need:
- O’Dough’s gluten free bagel thins
- Miyokos vegan cream cheese
- baby arugula
- smoked salmon (try to buy wild-caught if possible)
- English cucumber, sliced very thin
- fresh dill, chopped
- Everything But the Bagel seasoning from Trader Joe’s
- lemon
- capers
Toast the bagel. Smear on some of the cream cheese. Add a small handful of arugula, then pile on the smoked salmon. Squeeze a little fresh lemon juice over the salmon. Lay the cucumbers over the salmon, sprinkle on a little fresh dill, then some of the EBTB seasoning. Add capers if you choose.
