This is my go-to chicken salad, and I prepped it to have it for several lunches this week. We all love it besides Ridge. But he’s 3, so you know. 😉 It’s a mix of sweet, tart, and crunchy. Plus the curry is unexpected. We have served this apply curry chicken salad over greens, on a sandwich, and with crackers in Davis’ lunch box! I hope you enjoy it!
Feel free to tweak this to fit your preference. If you like less dressing in chicken salad, add a little bit at a time. You can adjust the amount of sugar and vinegar as well. I always mix up the chicken, celery, apples, and pecans in one bowl and the dressing in another. If the dressing needs some adjustment, it’s easier to do it in it’s own bowl before mixing the salad all together.
Apple Curry Chicken Salad
- 2-3 boneless chicken breasts
- around 2 Tbsp avocado oil
- salt and pepper
- dried herbs de provence (or a mix of your favorite dried herbs)
- 1 apple (unless it’s a really large apple, then use 1/2)
- 3-4 stalks celery
- 1 cup toasted pecans, chopped
- 1 cup avocado oil mayonnaise
- 3/4 tsp sea salt
- 1/2-3/4 tsp curry powder
- 1 tsp sugar
- 2-3 Tbsp raw AC vinegar
- black pepper to taste
First, cut the chicken breasts in half to make thinner pieces. Season with some of the dried herbs, salt and pepper. Preheat the oven to 375 degrees.
Heat a cast iron skillet and add enough avocado oil to cover the bottom of the pan. Place the chicken in the pan and cook on each side until lightly browned. Transfer the skillet, with the chicken, to the preheated oven. Cook until the internal temperature reaches 165 degrees. This took 12-15 minutes for me.
While the chicken is cooking, mix up the mayonnaise, sea salt, curry powder, sugar, apple cider vinegar, and black pepper. Adjust the seasoning as needed. Set aside.
Chop the celery into a very small dice. Chop the apple into a very small dice. Once the chicken is out of the oven, allow to cool, then chop that into a very small dice. Mix the celery, apple, pecans, and chicken together in a large bowl.
Add about half of the dressing to the chicken mixture and stir. Add more dressing as desired. You may not need to use all of it. Taste again and season as needed.
