Pinterest Recipes Review

I’ve made several recipes that I have pinned or liked on Pinterest the last couple weeks.  I know it is always helpful to hear reviews on things that are pinned, so here you go!

White Bean and Edamame Salad with Bacon: This was DELICIOUS!  I only used 1 can of beans and 5 slices of bacon.  I only had regular paprika, which worked well.  I want to buy some smoked paprika and make this again with that.

Honey, Lemon and Basil Grilled Chicken: Honestly, I completely forgot the basil, but this simply marinated chicken (2 ingredients, people!) was easy and so good.  I saved some marinade to use as a salad dressing and tossed it with arugula and parmesan.

BBQ Turkey Meatballs: This was one of those recipes I found while trying to use up existing food in my freezer and pantry. I had some frozen green beans (the ones from Trader Joe’s are actually really good – I thawed them then sautéed in garlic, butter, salt and pepper), some frozen turkey meatballs, also from TJ’s, and a bunch of rice that I had already cooked. The only part of this recipe that I used, since the meatballs were pre-cooked, was the sauce. I recommend it!  I think kids would enjoy it as well.  Negative – the meatballs I had were not gluten free, but Todd enjoyed them. 😉

Mini Ham and Cheese Breakfast Pies: I made these for a breakfast for church, but in a mini muffin tin. I used a biscuit cutter for the circles. I would recommend rolling the dough out more flat, though. It was a good recipe, and you could really use any filling with the eggs, but they were a little heavy on the crust.

French Toast Sticks: I made French toast hearts for the same breakfast as the mini pies. I used this recipe for French toast sticks, but instead of cutting them into strips, I used a heart cookie cutter. I could not find plain Texas toast, so I used old-fashioned white bread. You could use this idea with almost any shape for a fun kids or holiday breakfast! I recommend cutting the bread into shapes the night before – slightly stale bread is better for French toast.  I used whole milk instead of heavy whipping cream, and it worked well.  I did serve them with homemade whipped cream and a raspberry sauce, along with some strawberries.  It would be great with some simple powdered sugar and syrup, too!
