Made with Chobani: Healthy Tropical Dessert Parfait

I was recently invited and inspired by Chobani to come up with a recipe for their Made with Chobani campaign.  Flattered?!  Oh yes! Thank you for having me, Chobani.  I wasn’t sure which direction I wanted to go in when brainstorming a recipe, until perusing the yogurt case at the grocery store.  Then I saw it: Coconut Chobani Greek Yogurt.  Coconut Greek yogurt was a flavor I had never tried, but I had to use it in a recipe!  Going into this, I had a good feeling that combining it with tropical flavors such as pineapple and banana would be delicious!

Being that it is January, and everyone is attempting to slim down, I assumed it would be best to come up with a healthier dessert recipe.  And to be honest, my inspiration came from a popular island cocktail.  We can dream of the beach in January, right??  This healthier yogurt dessert has banana, coconut, pineapple, almonds, and a hint of nutmeg.  It is simple, quick to make, and perfect for breakfast, a hearty snack, or an after dinner dessert.

The recipe is below.  Enjoy this mini “trip to the islands” with Chobani!

  • 1 frozen banana
  • 1 c. frozen chopped pineapple
  • 1 small container (or 6 oz) coconut Chobani yogurt
  • 1/2 tsp honey*
  • pinch grated (or ground) nutmeg
  • pineapple, small dice
  • toasted, sliced almonds for garnish
  • toasted coconut for garnish

In a food processor or blender, add the frozen banana and frozen pineapple.  Blend until the fruit is almost pureed.  Add the yogurt and blend again until almost smooth.  Add in the honey and nutmeg, and blend again.

To serve, place a few spoonfuls of the yogurt in a glass.  Next layer a few pieces of pineapple, toasted almonds, and toasted coconut.  Repeat the layers of yogurt and garnishes.

*If you’d like it to be sweeter, add more honey.  This gave a hint of sweetness, but the tart yogurt flavor was still intact.
